Decided to try my hand at making 'Buffalo Wing' flavored chicken. I wanted something that I could use on chicken breasts instead of on fried chicken wings.
The modified recipe looks like this:
4 tbsp melted butter
0.5 cups Frank's Hot Sauce
1.0 tbsp Splenda
2.0 tbsp Apple cider vinegar
Optional:
1.0 - 2.0 tbsp Tabasco sauce
Directions:
I melted the butter in the microwave for 1.5 minutes, then stirred in the Frank's Hot Sauce and Tabasco. Once integrated, I added the Splenda and the cider vinegar, and stirred for a minute to make sure everything was well combined.
I then sliced up a boneless, skinless chicken breast that had been grilled (lightly seasoned with salt + pepper + olive oil). I placed the chicken strips into a skillet along with half of the buffalo sauce, trying to keep most of the chicken drippings out of the skillet.
I brought the mixture up to a simmer and stirred to ensure the chicken was coated in sauce. I let this simmer for about 10 mintutes to make sure the chicken was fully flavored.
I then removed the chicken from the skillet, making sure that drippings stayed in the skillet so that they would not dilute the remaining buffalo sauce.
For serving, I placed the sauce-simmered chicken strips on a plate along side the remaining buffalo sauce and some ranch dressing.
The combination is absolutely wonderful. Simmering the chicken helps make it really tasty, and keeping half of the sauce for later dipping works well (the sauce will thicken considerably as it cools).
The buffalo sauce was quite spicy with 2 tbsp of Tabasco. You can definitely tone things down by useing less/none.
