Young and I have arrived at what we believe is the the ultimate rib preparation:
1. Cook up a batch of my low-carb-ified Carolina style barbecue sauce (see here for recipe).
2. Put together a batch of my low-carb-ified Al Roker Spice Rub (see here for the recipe).
3. Get really good ribs from Dittmers in Mountain View. Apply a thick coat of the rub to the ribs, enclose in aluminum foil, and grill at 250-275 for 3 hours without touching them. On the Vermont Castings, this was obtained by keeping the center burner turned off, and the right and left burners set to their lowest setting.
4. Remove, wrap in platic wrap, and let sit for one hour.
5. Eat. Enjoy.
